Creamy sausage pasta- Breakfast Sausage

Ingredients:
500g fresh pasta ( or you can use 400g dry pasta)
300g of The Harrogate Original Breakfast Sausages
300ml of double cream
100ml of chicken or veg stock
2 cloves of garlic, chopped
1 tbsp chopped parsley
½ tsp dried tarragon
1/2 cup grated parmesan cheese
2 cups spinach leaves
1/2 cup sun dried tomatoes
Instructions:
Shred the sausages into small pieces and cook the crumble in a pan with a table spoon of olive oil, until the meat pieces are nice and golden in colour, take it out of the pan and leave it aside.
In the same pan, add the chopped garlic and stir, then pour in the cream and stock, add parmesan cheese, oregano and chopped sun dried tomatoes, salt and pepper to taste, whisk over medium heat until it starts to thicken. Add the spinach and chopped parsley and let it simmer until the spinach starts to wilt. Now add half of the sausage meat back and mix well.
Cook the fresh pasta in a pot of boiling water for about 2 – 3 minutes, drain the pasta and add it into the sauce, stir well and serve.
Sprinkle the rest of the sausage meat on top of the plates and grate Parmesan cheese on top as well.
