Sausage Tray Bake- Pork & Apple sausages

Ingredients:
8 The Harrogate Pork and Apple Sausages
300g baby potatoes, quartered
400g of butter beans rinsed and drained
1 large red pepper, chopped into chunks
2 corn on the cob, each sliced into thick pieces
2 medium onions, cut into quarters
5 cloves of garlic, crushed
3 tbsp olive oil
½ lemon, juiced
1 tsp paprika
1 tsp dried oregano
1 tsp ground cumin
½ a small bunch flat-leaf parsley, roughly chopped
Instructions
Heat the oven to 200C/fan 180C/gas 6. Put the sausages, potatoes, butter beans, peppers, corn slices, garlic and onion in a large baking dish. Drizzle in olive oil, add lemon juice, then sprinkle paprika ,oregano and cumin all over the vegetables and toss to coat. Cover securely with foil and roast for 30 minutes.
Uncover the tray and roast for a further 30 minutes or until everything is cooked through and the sausages are golden. Sprinkle parsley on top to serve, and lemon wedges to squeeze over.
